Imagine, you’re in your early 20s and you decide to book a ticket overseas to visit your sister and soak up some much needed sun. As you walk the streets of that foreign country you meet a man and in the blink of an eye you fall in love. As you fly back home, all you can think about is that man and how you really want to fly straight back and spend the rest of your life with him. Would you? Well, this lovely lady indeed decided to fly straight back to Mexico City, marry the man she fell in love with and spend the following 23 years in a country with habits and traditions that she wasn’t familiar with. While settling down in the nearby town of Puebla, Louise started exploring Mexican culture. As a young Dutch lady she was already exploring her love for cooking, but the Mexican kitchen proved to be somewhat different with loads of variation, the never-ending use of fresh ingredients and diversity in taste. While Spanish influences (Puebla was a Spanish colonial city…a long time ago) were very much visible, Louise loved playing around and using her own imagination to create amazing food. She not only ended up being a fantastic talent of Mexican cuisine, but she also ended up running her own restaurant there for years to come!
Today I had the pleasure of spending the day with Louise. I have to say that I love love looove this lady! She’s a bundle of joy and her passion for food and cooking is absolutely intoxicating! I can easily spend hours with her talking about different cuisines. When I asked her if she would be interested to become my very first featured blog post she immediately replied with a big “YES!”. Her featured dish is a (side-)dish that I just can’t EAT enough of. Through customizing a classic Spanish dish with some Mexican cuisine lovin we present Louise’s fantabulous signature Spanish Tortilla. YUM!

- 1 chorizo sausage (250 gr)
- 500 gr potato slices
- 1 large onion
- 6 eggs (add more depending on pan size)
- Sunflower oil
- Salt & Pepper
- Slice the chorizo sausage (as large as preferred) and fry in sunflower oil. Drain the sausage and use the chorizo flavored oil for the next step!
- Fry the onions and potatoes (until cooked) and drain after. Note: do NOT clean the pan after draining as we'll use the same one...included the leftover oil 😉
- Beat the eggs in a large bowl and stir in the drained potato/onion mixture.
- Heat up the pan (so without extra oil!) and put in the whole mixture.
- Let the (bottom part of the) mixture solidify a bit, then turn down the heat (as low as possible), put the lid on and leave it there for about 10 minutes.
- Now this is when it gets exciting as it's time to flip the tortilla! You can make this slightly intimidating step in the process a lot easier by grabbing a flat plate that has a LARGER surface than the pan, flip the tortilla onto this plate and gentle slide the tortilla back into the pan. Note that one must simply practice this to become an expert like Louise (see pics below!) and patience is a virtue my dearest foodies! 😉
- Put the lid back on and let the tortilla solidify once more on low heat for 10 minutes.
- Flip it on your flat plate, cut some lovely pieces and serve with whatever you'd wanna serve it with. Louise usually mixes some peppers, shallots, fresh cilantro and avocados into a fabulous fresh guacamole side dish. YUM!
